- Preheat the oven to 375°F.
- Sauté onion, carrots, celery, and thyme in butter until softened.
- Stir in flour and garlic and cook briefly.
- Add broth and milk and simmer until thickened.
- Fold in chicken and peas and season.
- Transfer filling to a baking dish and top with biscuits.
- Bake until biscuits are golden and filling is bubbling.
- Brush biscuits with melted butter before serving.
