Description

Soft gingerbread men cookies that hold their shape, bake evenly, and decorate cleanly. A dependable holiday cookie recipe tested for real kitchens.

Ingredients

Scale
  • ½ cup unsalted butter
  • ½ cup brown sugar
  • ½ cup unsulphured molasses
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2¾ cups all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1½ teaspoons ground ginger
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 3 cups powdered sugar
  • 24 tablespoons milk
  • 2 tablespoons light corn syrup
  • ½ teaspoon vanilla extract

Instructions

  1. Cream butter, brown sugar, and molasses until smooth.
  2. Mix in egg and vanilla until fully combined.
  3. Whisk dry ingredients together in a separate bowl.
  4. Add dry ingredients gradually to form a soft dough.
  5. Divide dough, wrap, and chill until firm.
  6. Roll dough evenly and cut into shapes.
  7. Bake until edges are set but centers remain soft.
  8. Cool completely before decorating with icing.

Notes

  1. Use unsulphured molasses, not blackstrap.
  2. Chill dough thoroughly to prevent spreading.
  3. Do not overbake; cookies firm up as they cool.
