Description

Thick chocolate chip s’mores cookies with gooey marshmallows and melted chocolate. No chilling required and ready in about 30 minutes.


Ingredients

  • 2 1/3 cups all-purpose flour
  • 1/2 cup graham cracker crumbs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup chopped graham crackers


Instructions

  1. Preheat oven and prepare baking sheets.
  2. Mix dry ingredients in a bowl.
  3. Cream butter and sugars until light and fluffy.
  4. Add vanilla and eggs, mixing until combined.
  5. Mix in dry ingredients gently.
  6. Fold in chocolate chips, marshmallows, and graham crackers.
  7. Portion dough into large balls and place on baking sheets.
  8. Bake until edges are golden and centers are soft.
  9. Cool briefly before transferring to a rack.

Notes

  1. Use mini marshmallows to prevent melting away.
  2. Bake until centers look slightly underdone for best texture.
