- 1. Pat the chicken dry and season it with salt, pepper, and Italian seasoning.
- 2. Optional: Sear each side briefly in olive oil or butter for added flavor.
- 3. In a bowl, whisk together heavy cream, chicken broth, minced garlic, cream cheese, and Parmesan until smooth.
- 4. Place the chicken in the slow cooker and pour the sauce mixture evenly over the top.
- 5. If adding potatoes or vegetables, arrange them around the chicken.
- 6. Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is tender.
- 7. Stir gently before serving, then sprinkle with fresh parsley and extra Parmesan.
- 8. Serve over pasta, mashed potatoes, or rice for a complete meal.
Notes
For a lighter version, substitute light cream or half-and-half.
To freeze, store the chicken and sauce (without pasta) in a freezer-safe container for up to 2 months.
Reheat gently on the stovetop or microwave, adding a splash of broth or milk to loosen the sauce.
