Ingredients

  • 2 pounds boneless skinless chicken breasts or thighs
  • 1 tablespoon olive oil or butter
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 4 ounces cream cheese softened
  • 2 tablespoons chopped parsley for garnish
  • 1 pound small potatoes or baby reds halved (optional)
  • 2 cups spinach or broccoli florets optional
  • Cooked pasta or rice for serving

Method

  1. 1. Pat the chicken dry and season it with salt, pepper, and Italian seasoning.
  2. 2. Optional: Sear each side briefly in olive oil or butter for added flavor.
  3. 3. In a bowl, whisk together heavy cream, chicken broth, minced garlic, cream cheese, and Parmesan until smooth.
  4. 4. Place the chicken in the slow cooker and pour the sauce mixture evenly over the top.
  5. 5. If adding potatoes or vegetables, arrange them around the chicken.
  6. 6. Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is tender.
  7. 7. Stir gently before serving, then sprinkle with fresh parsley and extra Parmesan.
  8. 8. Serve over pasta, mashed potatoes, or rice for a complete meal.

Notes

For a lighter version, substitute light cream or half-and-half.
To freeze, store the chicken and sauce (without pasta) in a freezer-safe container for up to 2 months.
Reheat gently on the stovetop or microwave, adding a splash of broth or milk to loosen the sauce.
