Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 chipotle chile in adobo
  • 1 tbsp adobo sauce
  • 1 tbsp honey
  • ½ lime juiced
  • ½ tsp garlic powder
  • ½ tsp ground cumin
  • Salt
  • Black pepper
  • 1 cup corn kernels
  • 1 avocado
  • 1 jalapeño
  • 1 tbsp chopped cilantro
  • 2 cups cooked white rice
  • Queso fresco or cotija cheese
  • Lime wedges

Method
 

  1. Whisk olive oil, chipotle, adobo sauce, honey, lime juice, and spices.
  2. Marinate the chicken for at least 1 hour.
  3. Cook chicken on a grill or skillet over medium-high heat until done.
  4. Rest the chicken, then slice.
  5. Mix corn, avocado, jalapeño, cilantro, lime juice, and seasoning.
  6. Assemble bowls with rice, chicken, salsa, and cheese.

Notes
