Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 pound total)
  • 8 ounces penne or fettuccine pasta
  • 2 teaspoons Cajun seasoning plus extra for garnish
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese

Method
 

  1. 1. Cut chicken into bite-sized pieces and toss with Cajun seasoning until coated.
  2. 2. Boil pasta in salted water until al dente, reserving 1/2 cup pasta water.
  3. 3. Sear the seasoned chicken in a skillet with a drizzle of oil until golden and cooked through.
  4. 4. Pour heavy cream into the same pan and simmer 3–4 minutes, scraping up browned bits.
  5. 5. Stir in Parmesan cheese until melted and creamy.
  6. 6. Add cooked pasta and chicken back into the skillet, tossing to coat evenly.
  7. 7. Adjust sauce consistency with a splash of pasta water if needed.
  8. 8. Serve hot, garnished with extra Cajun seasoning or parsley.

Notes

For a lighter version, swap heavy cream with half-and-half or Greek yogurt. Add extra Parmesan to thicken or more cream to loosen the sauce. The dish pairs perfectly with garlic bread or a crisp salad.
