- 1. Prepare the blueberries by simmering them with honey or sugar until slightly thickened, then let cool.

- 3. Layer brie or goat cheese on the inner sides, then spoon the blueberries on top.

- 5. Place the sandwich in a skillet over medium-low heat and cook slowly until each side turns golden brown.
- 6. Let the sandwich rest for a minute on a wire rack, then slice diagonally and serve warm.
Notes
For a crispier texture, use mayonnaise instead of butter on the outer crust. You can prepare the blueberry spread up to a week ahead and store it refrigerated. Avoid overfilling the sandwich to keep it from turning soggy.
