Creamy Beef Pasta

Ingredients
  

  • 1 pound ground beef 80/20 blend
  • 12 ounces pasta rotini, penne, or shells
  • 1 tablespoon olive oil or butter
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar or mozzarella cheese
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish
  • Optional: 2 tablespoons tomato paste 1 cup mushrooms or bell peppers, red pepper flakes

Method
 

  1. 1. Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until browned and slightly crisp on the edges. Season with salt, pepper, and Italian seasoning.
  2. 2. Remove excess grease. Add diced onions and cook until translucent. Stir in minced garlic and cook for another 30 seconds.
  3. 3. Stir in tomato paste if using, then pour in beef broth to deglaze the pan. Let it simmer for 2 minutes.
  4. 4. Reduce heat and add heavy cream, stirring until smooth. Allow the sauce to thicken slightly.
  5. 5. Add cooked pasta to the sauce and fold gently. Stir in shredded cheese until melted and creamy.
  6. 6. Adjust seasoning to taste and garnish with chopped parsley before serving.

Notes

For a lighter version, use ground turkey and half-and-half instead of heavy cream.
Store leftovers in an airtight container for up to 4 days. Add a splash of milk or broth when reheating.
