Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 1 medium green bell pepper
  • 1 medium red bell pepper
  • 1 medium jalapeño pepper
  • 3 cloves garlic
  • 1 ¼ teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • 12 ounces andouille sausage
  • 1 pound Yukon Gold potatoes
  • 4 cups low-sodium chicken broth
  • ¾ cup heavy cream
  • Salt
  • Fresh chives

Method
 

  1. Heat olive oil and sauté onion, bell peppers, and jalapeño until softened.
  2. Add garlic and cook briefly until fragrant.
  3. Stir in Cajun seasoning, smoked paprika, and black pepper.
  4. Add sausage and potatoes and cook until potatoes turn opaque.
  5. Pour in chicken broth and simmer gently until potatoes are tender.
  6. Remove from heat and stir in heavy cream.
  7. Season with salt and garnish with chives.

Notes

  1. Let the soup cool before storing.
  2. Reheat gently over low heat to avoid splitting.
  3. Add broth or milk if the soup thickens after chilling.
