Slow Cooker Honey Garlic Chicken is an easy weeknight crockpot recipe with tender shredded chicken and a rich sweet-savory sauce.

- 1–2.2 lbs boneless skinless chicken thighs or breasts
- 1/3 cup honey
- 1/3 cup soy sauce
- 1 tbsp rice vinegar
- 4 garlic cloves, minced
- 1 tbsp tomato paste
- 1 tbsp chili paste
- 2 tbsp cornstarch
- green onions (for serving)
- sesame seeds (for serving)
Instructions
- Place chicken in the bottom of the slow cooker in an even layer.
- Whisk together soy sauce, honey, tomato paste, chili paste, garlic, and rice vinegar, then pour over chicken.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until chicken reaches 165°F.
- Remove chicken and set aside, then whisk cornstarch into the cooking liquid.
- Cook sauce on HIGH for 15 minutes until thickened, or reduce on stovetop for faster results.
- Shred chicken and return it to the thickened sauce, stirring to coat evenly.
- Serve over rice topped with green onions and sesame seeds.
