Description

This **Slow Cooker Beef Stew** is the ultimate comfort food, packed with tender chunks of beef, hearty vegetables, and a rich, flavorful gravy. Perfect for busy nights or meal prep.


Ingredients

  • 2 lbs Ground beef (80/20 blend)
  • ½ cup Breadcrumbs
  • 1 Egg (beaten)
  • 1 Onion (finely diced)
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 3 tbsp Butter
  • 3 tbsp plain flour
  • 2 cups Beef broth
  • 1 cup Heavy cream
  • 1 Onion (sliced)
  • 1 tsp Garlic powder
  • 2 tsp Worcestershire sauce
  • 4 Yukon gold potatoes (diced)
  • 4 Carrots (sliced)
  • 2 Celery stalks (sliced)
  • 1 tsp Smoked paprika
  • 2 Bay leaves
  • Fresh parsley (for garnish)


Instructions

  1. In a large bowl, gently mix ground beef, breadcrumbs, beaten egg, diced onion, salt, and pepper.
  2. Form into 6-8 oval-shaped patties and set aside.
  3. Heat a skillet over medium heat and brown the beef patties for 3-4 minutes per side.
  4. Remove beef from the skillet and set aside.
  5. In the same skillet, melt butter and sauté sliced onions until soft.
  6. Stir in flour and cook for 1 minute.
  7. Add beef broth, Worcestershire sauce, and garlic powder; stir until thickened.
  8. Layer the browned beef patties, potatoes, carrots, and celery in the slow cooker.
  9. Pour the gravy mixture over the beef and vegetables.
  10. Cover and cook on low for 7-8 hours or high for 3-4 hours.
  11. Before serving, stir in heavy cream and adjust seasoning.
  12. Garnish with fresh parsley and serve with mashed potatoes or crusty bread.

Notes

  1. For a thicker gravy, make a cornstarch slurry and stir it in towards the end of cooking.
  2. You can add other vegetables like parsnips or sweet potatoes for extra flavor.
