Description

If you’ve ever found yourself craving that crispety, crunchety, peanut-buttery flavor of a Butterfinger bar but didn’t want to turn on the oven, these no-bake Butterfinger bites are your perfect solution. They deliver all the sweet, crunchy, chocolatey satisfaction in just minutes without any baking.

Ingredients

Scale
  • 1 cup creamy peanut butter (not natural)
  • 2 cups crushed corn flakes or crisp rice cereal
  • ½ cup honey or light corn syrup
  • ¼ teaspoon salt 1 teaspoon vanilla extract
  • 1½ cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or butter
  • ½ cup crushed Butterfinger candy bars (optional)

Instructions

  1. In a medium bowl, mix peanut butter, honey, salt, and vanilla until smooth.
  2. Add the crushed cereal and stir until evenly coated.
  3. Scoop 1 tablespoon of the mixture and roll into balls.
  4. Place on a parchment-lined tray.
  5. Chill the tray for 15 minutes to firm up the bites.
  6. Melt chocolate chips and coconut oil in 30-second intervals until smooth.
  7. Dip each bite into the melted chocolate and return to the tray.
  8. Refrigerate again for 20 minutes until the coating sets.
  9. Sprinkle with crushed Butterfinger pieces or flaky salt if desired.

Notes

  1. Store the bites in an airtight container in the refrigerator for up to one week.
  2. For longer storage, freeze for up to two months and thaw in the fridge before serving.
  3. Use parchment paper layers between bites to prevent sticking.
