- 1 cup creamy peanut butter (not natural)
- 2 cups crushed corn flakes or crisp rice cereal
- ½ cup honey or light corn syrup
- ¼ teaspoon salt 1 teaspoon vanilla extract
- 1½ cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or butter
- ½ cup crushed Butterfinger candy bars (optional)
Instructions
- In a medium bowl, mix peanut butter, honey, salt, and vanilla until smooth.
- Add the crushed cereal and stir until evenly coated.
- Scoop 1 tablespoon of the mixture and roll into balls.
- Place on a parchment-lined tray.
- Chill the tray for 15 minutes to firm up the bites.
- Melt chocolate chips and coconut oil in 30-second intervals until smooth.
- Dip each bite into the melted chocolate and return to the tray.
- Refrigerate again for 20 minutes until the coating sets.
- Sprinkle with crushed Butterfinger pieces or flaky salt if desired.
