Key West Grilled Chicken is a tropical-inspired grilled chicken recipe made with lime juice, orange juice, pineapple juice, garlic, and ginger. The citrus marinade keeps the chicken juicy while creating smoky caramelized grill marks that work perfectly for summer dinners and backyard cookouts.

Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 1/4 cup pineapple juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • Fresh cilantro for garnish

Instructions

  1. Whisk together lime juice, orange juice, pineapple juice, olive oil, honey, garlic, ginger, salt, black pepper, and red pepper flakes in a bowl until fully combined.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over the chicken until evenly coated.
  3. Refrigerate for at least 1 hour or overnight for deeper flavor.
  4. Preheat the grill to medium-high heat and lightly oil the grates.
  5. Remove the chicken from the marinade and let the excess drip off naturally.
  6. Grill the chicken for 6 to 7 minutes per side until the internal temperature reaches 165 degrees Fahrenheit.
  7. Transfer the chicken to a plate and let it rest for 5 minutes before slicing.
  8. Garnish with fresh cilantro and serve warm.

Notes

  1. Fresh citrus juice gives the best flavor for this recipe.
  2. Do not marinate the chicken longer than 8 hours because the citrus can affect the texture.
  3. Let the chicken rest before slicing to keep it juicy.
  4. Chicken thighs can be substituted for chicken breasts if preferred.
