Description

Light, flavorful Greek-inspired turkey meatballs paired with refreshing homemade tzatziki are perfect for a light and nutritious weeknight dinner.

Ingredients

  • 1 pound minced turkey
  • 1 big egg
  • 1 cup panko breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped dill or 1 teaspoon desiccated dill
  • 1 teaspoon dried marjoram
  • 2 pieces of garlic, minced
  • 1/4 cup finely diced red onion
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Zest of 1 lemon
  • 1 cup plain Greek yogurt
  • 1/2 cup minced cucumber, squeezed dry
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 small garlic clove, minced
  • 1 tablespoon olive oil
  • Pinch of salt and pepper


Instructions

  1. Combine ground turkey, egg, breadcrumbs, herbs, garlic, onion, lemon zest, salt, and pepper.
  2. Mix lightly until ingredients are evenly incorporated without overworking.
  3. Shape mixture into small meatballs.
  4. Bake at 400°F for 18 minutes or until internal temperature reaches 165°F.
  5. Prepare tzatziki by mixing yogurt, grated cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper.
  6. Chill tzatziki before serving.
  7. Plate meatballs and top with tzatziki for serving.

  1. For juicier meatballs, avoid overmixing the turkey.
  2. Chill the tzatziki to improve flavor.
  3. Use 93/7 ground turkey for the best balance of moisture and leanness.
