This garlic parmesan chicken meatloaf is a moist, cheesy twist on the classic comfort dish, made with lean ground chicken, fresh garlic, and plenty of Parmesan for a flavorful, family-friendly meal.

  • ½ cup shredded Parmesan cheese
  • ¾ cup breadcrumbs
  • 3 pieces garlic, minced
  • 1 big egg
  • ½ cup milk
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon crushed Italian herbs
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup shredded mozzarella (optional topping)
  • 2 tablespoons melted butter (for glaze)
  • 1 tablespoon grated Parmesan (for glaze)
  • ½ teaspoon chopped powder (for glaze)
  • Pinch of parsley (for garnish)

Instructions

  1. Preheat oven to 375°F and lightly grease a loaf pan or line with parchment paper.
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, egg, milk, salt, pepper, and herbs.
  3. Mix gently until just combined to avoid a dense texture.
  4. Transfer the mixture to the loaf pan and shape into a loaf.
  5. Brush the top with olive oil and bake for 45–50 minutes, until the internal temperature reaches 165°F.
  6. In the last 10 minutes, brush with garlic butter glaze and sprinkle mozzarella if desired.
  7. Let rest 5–10 minutes before slicing and serving.

Notes

  1. Avoid overmixing to keep the texture light and tender.
  2. For extra flavor, mix a bit of shredded mozzarella into the meat mixture.
  3. Store leftovers in an airtight container for up to 4 days or freeze up to 3 months.
