Description

Garlic Parmesan Chicken and Potatoes is a comforting one-pan dinner featuring juicy roasted chicken and crispy golden potatoes coated in buttery garlic and melted Parmesan. It’s simple, hearty, and perfect for cozy weeknights or family dinners.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs

  • lbs baby potatoes, halved

  • 4 cloves garlic, minced

  • 3 tbsp olive oil

  • 2 tbsp unsalted butter, melted

  • ½ cup freshly grated Parmesan cheese

  • 1½ tsp Italian seasoning

  • ½ tsp paprika

  • Salt and black pepper, to taste

  • 2 tbsp chopped fresh parsley (for garnish)

  • Optional: ¼ tsp crushed red pepper flakes


Instructions

  • Preheat oven to 400°F (200°C).

  • Line a large baking sheet with parchment paper or lightly grease it.

  • In a mixing bowl, toss the potatoes with olive oil, half of the minced garlic, salt, pepper, and half of the Parmesan.

  • Arrange the chicken pieces and potatoes evenly on the baking sheet.

  • Drizzle melted butter over the chicken and sprinkle with remaining garlic, Parmesan, Italian seasoning, and paprika.

  • Roast for 30–40 minutes, flipping once halfway through, until the chicken reaches 165°F internally and the potatoes are golden and crisp.

  • Garnish with chopped parsley and a light dusting of Parmesan before serving warm.


Notes

  • For crispier potatoes, avoid overcrowding the baking sheet.

  • Substitute chicken thighs for extra juiciness or use a mix of both.

  • Add a squeeze of lemon juice before serving to brighten the flavor.

  • Can be made gluten-free by ensuring all seasonings and Parmesan are certified gluten-free.
