Garlic Parmesan Chicken and Potatoes is a comforting one-pan dinner featuring juicy roasted chicken and crispy golden potatoes coated in buttery garlic and melted Parmesan. It’s simple, hearty, and perfect for cozy weeknights or family dinners.
2 lbs boneless, skinless chicken breasts or thighs
1½ lbs baby potatoes, halved
4 cloves garlic, minced
3 tbsp olive oil
2 tbsp unsalted butter, melted
½ cup freshly grated Parmesan cheese
1½ tsp Italian seasoning
½ tsp paprika
Salt and black pepper, to taste
2 tbsp chopped fresh parsley (for garnish)
Optional: ¼ tsp crushed red pepper flakes
Preheat oven to 400°F (200°C).
Line a large baking sheet with parchment paper or lightly grease it.
In a mixing bowl, toss the potatoes with olive oil, half of the minced garlic, salt, pepper, and half of the Parmesan.
Arrange the chicken pieces and potatoes evenly on the baking sheet.
Drizzle melted butter over the chicken and sprinkle with remaining garlic, Parmesan, Italian seasoning, and paprika.
Roast for 30–40 minutes, flipping once halfway through, until the chicken reaches 165°F internally and the potatoes are golden and crisp.
Garnish with chopped parsley and a light dusting of Parmesan before serving warm.
For crispier potatoes, avoid overcrowding the baking sheet.
Substitute chicken thighs for extra juiciness or use a mix of both.
Add a squeeze of lemon juice before serving to brighten the flavor.
Can be made gluten-free by ensuring all seasonings and Parmesan are certified gluten-free.
