Easy baked tortellini casserole with sausage, marinara, spinach, and melted cheese baked until bubbly and golden.

Ingredients

  • 1/2 tbsp olive oil
  • 1 lb ground Italian sausage
  • 1 medium onion diced
  • 1/2 cup diced carrots
  • 3 cloves garlic minced
  • 2 cups fresh spinach
  • 24-32 oz marinara sauce
  • 1/2 cup water or broth
  • 20-22 oz cheese tortellini
  • 2-3 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F
  2. Heat olive oil in a large oven-safe skillet over medium-high heat
  3. Add sausage, onion, carrot, and garlic and cook until browned and tender
  4. Pour in marinara sauce and water or broth
  5. Add spinach and cook until slightly wilted
  6. Season with salt and pepper
  7. Add tortellini, half the mozzarella, and Parmesan and mix well
  8. Spread evenly and top with remaining mozzarella
  9. Cover and bake for 40 minutes until cheese is melted and golden
  10. Optional: broil uncovered for 1-2 minutes to brown cheese
  11. Rest for 5 minutes before serving

Notes

  1. Use fresh or refrigerated tortellini for best texture
  2. Keep casserole covered while baking to prevent dryness
  3. Add extra liquid if using frozen tortellini
  4. Let casserole rest before serving for cleaner slices
