Description

This crockpot tortellini soup with sausage is a creamy, hearty, and flavorful comfort meal made with Italian sausage, cheese tortellini, and a rich tomato broth — perfect for cozy nights or easy weeknight dinners.


Ingredients

1 lb Italian sausage (mild or spicy)

1 tbsp olive oil

1 medium yellow onion, diced

3 cloves garlic, minced

1 tsp dried Italian seasoning

1/2 tsp crushed red pepper flakes (optional)

4 cups chicken broth

1 can (14.5 oz) diced tomatoes

1 can (8 oz) tomato sauce

1 cup chopped spinach or kale

1 cup heavy cream or half-and-half

20 oz cheese tortellini (fresh or frozen)

Salt and black pepper to taste

Fresh basil and grated Parmesan for garnish


Instructions

1. Brown the Italian sausage in a skillet over medium heat until fully cooked, then drain excess fat.

2. Add the sausage, diced onions, minced garlic, Italian seasoning, and crushed red pepper flakes to the crockpot.

3. Pour in the chicken broth, diced tomatoes, and tomato sauce, then stir gently to combine.

4. Cover and cook on Low for 6–7 hours or High for 3–4 hours.

5. During the last 30 minutes, add the cheese tortellini, chopped spinach, and cream to the crockpot.

6. Season with salt and black pepper to taste.

7. Ladle into bowls and top with grated Parmesan and fresh basil before serving.


Notes

For the best texture, add tortellini and cream toward the end of cooking to prevent overcooking or curdling. Store leftovers in airtight containers and keep the pasta separate if possible. Reheat gently before serving.
