Description

This Crock Pot Creamy Chicken Parmesan Soup blends tender shredded chicken, a rich tomato-Parmesan broth, and pasta into a comforting, creamy slow-cooked meal.


Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups crushed tomatoes
  • 1 cup tomato sauce
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan
  • 1 cup shredded mozzarella
  • 1 medium-sized onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon crushed basil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 cups uncooked short pasta
  • Fresh basil or parsley


Instructions

  1. Add chicken, crushed tomatoes, tomato sauce, broth, onion, garlic, and seasonings to the crock pot.
  2. Cook on Low for 6–8 hours or High for 3–4 hours.
  3. Remove chicken, shred, and return it to the pot.
  4. Stir in heavy cream and Parmesan until smooth.
  5. Add pasta and cook until tender.
  6. Stir in mozzarella before serving.
  7. Garnish with fresh basil or parsley.

Notes

  1. Cook pasta separately for firmer texture.
  2. Add extra broth when reheating if the soup thickens.
