Ingredients
4 slices sourdough or artisan bread
1 tablespoon unsalted butter or mayo
4 ounces brie or goat cheese
½ cup blueberries (fresh or cooked into jam)
1 teaspoon honey or balsamic glaze (optional)
1 pinch of thyme or basil (optional)
Instructions
1. Prepare the blueberries by simmering them with honey or sugar until slightly thickened, then let cool.
2. Spread butter or mayo on the outer sides of each bread slice.
3. Layer brie or goat cheese on the inner sides, then spoon the blueberries on top.
4. Add another thin layer of cheese for an extra gooey melt.
5. Place the sandwich in a skillet over medium-low heat and cook slowly until each side turns golden brown.
