This One Pot Creamy Garlic Pasta is a rich, comforting dinner made in just 20 minutes. Cooked in a single pan with garlic, milk, and Parmesan, the pasta releases starch as it simmers, creating a naturally creamy sauce. It’s perfect for busy weeknights when you want something warm, simple, and satisfying.

  • 8 oz pasta (spaghetti, linguine, or penne)
  • 1 tablespoon butter or olive oil
  • 4 cloves garlic, minced
  • 2 cups whole milk
  • 1 cup water
  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons cream cheese or sour cream (optional)
  • Fresh parsley or basil for garnish

Instructions

  1. Melt butter or heat olive oil in a large skillet over medium heat. Add minced garlic and cook for about 1 to 2 minutes until fragrant.
  2. Add the dry pasta to the pan. Pour in the milk and enough water to just barely cover the pasta. Stir to combine.
  3. Bring the mixture to a gentle boil, then reduce heat to a simmer. Cook uncovered for 8 to 10 minutes, stirring frequently.
  4. Continue cooking until the pasta is tender and most of the liquid has reduced into a creamy sauce.
  5. Stir in the Parmesan cheese, salt, pepper, and Italian seasoning until the cheese melts and the sauce thickens.
  6. If desired, mix in cream cheese or sour cream for extra creaminess.
  7. Taste and adjust seasoning if needed. Garnish with chopped parsley or basil and serve hot.

Notes

  1. Freshly grated Parmesan melts more smoothly and gives the sauce better flavor.
  2. If the sauce becomes too thick, stir in a splash of milk while the pasta is warm.
  3. You can add grilled chicken, shrimp, mushrooms, or spinach to make the dish more filling.
  4. Store leftovers in an airtight container in the refrigerator for up to 3 days.
