- 1 cup (2 sticks) unsalted butter, melted and slightly cooled
- 1 cup firmly packed light brown sugar
- ½ cup granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 1 ¾ cups plain flour
- 1 teaspoon cooking soda
- ½ teaspoon cooking powder
- ½ teaspoon salt
- 2 cups old-fashioned rolled oats
- 2 cups semi-sweet chocolate chips
- ½ cup diced walnuts or pecans (optional)
- Flaky sea salt for topping (optional)
Instructions
- Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth.
- Add eggs and vanilla, mixing until creamy.
- In another bowl, whisk flour, baking soda, baking powder, and salt.
- Stir dry ingredients into the wet mixture until just combined.
- Fold in oats and chocolate chips.
- Spread dough evenly into the prepared pan and smooth the top.
- Bake for 25–30 minutes until edges are golden and center looks set.
- Cool completely before slicing into squares.
Notes
- Use old-fashioned oats for the best chewy texture.
- Don’t overbake — bars continue cooking as they cool.
- Warm briefly before serving for melty chocolate centers.
