Description

This chicken avocado melt sandwich combines juicy seasoned chicken, creamy avocado, and melted cheese between golden toasted bread for the perfect balance of crisp and creamy comfort.


Ingredients

2 cooked chicken breasts, sliced thin

1 ripe avocado, sliced or mashed

4 slices sourdough or ciabatta bread

4 slices cheese (gouda, provolone, or cheddar)

2 tablespoons mayonnaise or chipotle mayo

1 tablespoon butter

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon black pepper

Pinch of salt

Optional: sliced tomato, bacon strips, or honey mustard drizzle


Instructions

1. Season and cook the chicken breasts with garlic powder, paprika, salt, and pepper until golden and fully cooked.

2. Spread butter on the outer sides of the bread slices and mayonnaise or sauce on the inside.

3. Layer cheese, chicken, avocado, and another slice of cheese between the bread slices.

4. Grill the sandwich in a skillet or pan over medium heat for 3–4 minutes per side until golden brown and the cheese is melted.

5. Slice diagonally and serve immediately with fries, salad, or soup.


Notes

You can use rotisserie chicken for a quicker version.

Avocado can be brushed with lime juice to prevent browning.

Use a panini press for an evenly toasted crust.
