- 12 ounces andouille sausage
- 1 pound Yukon Gold potatoes
- 4 cups low-sodium chicken broth
- 3/4 cup heavy cream
- Salt
- Fresh chives
Instructions
- Heat olive oil and sauté onion, bell peppers, and jalapeño until softened.
- Add garlic and cook briefly until fragrant.
- Stir in Cajun seasoning, smoked paprika, and black pepper.
- Add sausage and potatoes and cook until potatoes turn opaque.
- Pour in chicken broth and simmer gently until potatoes are tender.
- Remove from heat and stir in heavy cream.
- Season with salt and garnish with chives.
