Description

A cozy, flavorful breakfast casserole made with fluffy eggs, sharp cheddar, and tender broccoli baked to perfection — simple, hearty, and ideal for any morning.

Ingredients

Scale
  • 8 large eggs
  • 1 cup whole milk or half-and-half
  • 2 cups chopped fresh broccoli florets
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 small onion, finely diced (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil or butter (for greasing pan)
  • ½ cup cooked bacon or diced ham (optional)
  • ½ cup chopped bell peppers or mushrooms (optional)
  • ¼ teaspoon smoked paprika (optional)

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish with butter or olive oil.
  2. Blanch or steam the chopped broccoli for 2 minutes until slightly tender, then drain well.
  3. In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper until smooth.
  4. Add broccoli, half of the cheese, and any optional add-ins, stirring to combine.
  5. Pour mixture into the prepared dish and sprinkle remaining cheese on top.
  6. Bake for 30–35 minutes until center is set and edges are golden brown.
  7. Cool for 10 minutes before slicing and serving.

Notes

  1. Ensure broccoli is well-drained to avoid excess moisture.
  2. For a lighter version, use egg whites and low-fat cheese.
  3. Leftovers can be refrigerated up to 5 days or frozen for up to 2 months.
