Description

These brioche donuts are soft, buttery, and golden—an indulgent twist on traditional Thanksgiving desserts. Each donut is rich, airy, and perfect for pairing with seasonal flavors like pumpkin spice, cranberry jam, or maple glaze.


Ingredients

  • 3 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 packet (2 ¼ tsp) active dry yeast
  • ½ tsp salt
  • 4 large eggs
  • ½ cup whole milk, warmed
  • ¾ cup unsalted butter, softened
  • Vegetable oil, for frying
  • 1 cup sugar, for coating (optional)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Pumpkin puree or cranberry jam (optional filling)


Instructions

  1. Dissolve the yeast in warm milk with a pinch of sugar and let it sit until foamy.
  2. Mix sugar, eggs, flour, and salt, then gradually add the butter until the dough becomes smooth and elastic.
  3. Cover the dough and let it rise for 90 minutes until doubled in size.
  4. Punch down the dough, roll it out, and cut into rounds.
  5. Let the shaped donuts rise for another 30–40 minutes until puffy.
  6. Heat oil to 365°F and fry each donut 1–2 minutes per side until golden brown.
  7. Drain on a rack and coat with sugar or drizzle with glaze while warm.
