Description

A warm, comforting make-ahead breakfast casserole filled with soft custard-soaked brioche, juicy blueberries, and sweet vanilla-cinnamon flavor.


Ingredients

  • 1 loaf brioche bread, cubed
  • 2 cups fresh or frozen blueberries
  • 6 large eggs
  • 2 cups whole milk or cream
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 cup maple syrup
  • 1 teaspoon lemon zest
  • Powdered sugar for serving


Instructions

  1. Cut brioche into medium cubes and place them in a large bowl.
  2. Whisk eggs, milk, vanilla, cinnamon, maple syrup, and lemon zest until smooth.
  3. Layer half the brioche in a baking dish and sprinkle half the blueberries on top.
  4. Add the remaining brioche and blueberries.
  5. Pour the custard mixture evenly over the bread and gently press to soak.
  6. Cover and refrigerate overnight.
  7. Bake at 350°F for 45–60 minutes until golden and set in the center.
  8. Cool slightly, then serve warm with powdered sugar or syrup.

Notes

  1. Day-old brioche works best for absorbing the custard without getting soggy.
  2. Frozen blueberries can be used without thawing.
  3. Serve with maple syrup, whipped cream, or fresh berries.
