- 1 1/4 cups old-fashioned rolled oats
- 1/2 cup unsalted butter
- 3/4 cup brown sugar
- 1 big egg
- 1 tsp pure vanilla extract
- 3/4 cup finely chopped apple
- 1 tsp ground cinnamon
- 1/2 tsp sodium bicarbonate
- 1/2 tsp salt
- 2 tsp fresh lemon juice
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper
- Whisk together flour, oats, cinnamon, baking soda, and salt
- Cream butter and brown sugar until combined, then mix in egg and vanilla
- Toss chopped apples with lemon juice separately
- Mix dry ingredients into wet ingredients until just combined
- Fold in apples gently
- Scoop dough into 2 tablespoon portions and space 2 inches apart
- Flatten cookies slightly before baking
- Bake for 14 to 15 minutes until edges are set
- Cool on baking sheet before transferring to a wire rack
Notes
- Chop apples into small pieces to avoid excess moisture
- Do not overmix once flour is added to keep cookies tender
- Bake one tray at a time for even results
- Let cookies cool before moving to prevent breaking
