Ingredients
2 large eggs
¾ cup milk (whole or 2%)
½ cup pure pumpkin puree
1 tablespoon maple syrup or brown sugar
1 teaspoon pumpkin pie spice
6 thick slices brioche or Texas toast
Optional: pinch of salt, splash of vanilla extract
Instructions
1. In a shallow bowl, whisk together eggs, milk, pumpkin puree, maple syrup, and pumpkin pie spice until smooth.
2. Dip each slice of bread in the pumpkin mixture for about 10 seconds per side.
